Braised Mustard Green and Cabbage
Ingredients
| 1/2 Pound | uncured bacon, diced | | 1 | small yellow onion, sliced |
| 1 Pound | bag chopped mustard greens |
| 7 Cup | green cabbage, cored and chopped |
| 3-1/2 Cup | water |
| 1 Teaspoon | sugar |
| 1 Teaspoon | fresh thyme leaves |
| 1 Teaspoon | smoked paprika |
| 2 | Idaho potatoes, peeled and cut into large cubes |
| to taste | Salt and pepper |
Directions
Place large stockpot over medium heat and add bacon. Cook bacon until browned and crisp. Add onions and cook until translucent. Add greens and cabbage, sautéing for about 5 minutes. Add water, sugar, thyme, smoked paprika and potatoes, and season with salt and pepper to taste. Simmer covered 25-30 minutes, stirring occasionally, until vegetables are fork tender.
