Braised Mustard Green and Cabbage

Ingredients

1/2 Pound  uncured bacon, diced
1  small yellow onion, sliced
1 Pound  bag chopped mustard greens
7 Cup  green cabbage, cored and chopped
3-1/2 Cup  water
1 Teaspoon  sugar
1 Teaspoon  fresh thyme leaves
1 Teaspoon  smoked paprika
2  Idaho potatoes, peeled and cut into large cubes
to taste  Salt and pepper

Directions

Place large stockpot over medium heat and add bacon. Cook bacon until browned and crisp. Add onions and cook until translucent. Add greens and cabbage, sautéing for about 5 minutes. Add water, sugar, thyme, smoked paprika and potatoes, and season with salt and pepper to taste. Simmer covered 25-30 minutes, stirring occasionally, until vegetables are fork tender.
