Thai Cucumber Salad
Ingredients
| 2 Tablespoon | lime juice | | 1/4 Cup | seasoned rice vinegar |
| 1-1/2 Tablespoon | Tbsp. sugar |
| 2 Tablespoon | Kikkoman Aji-Mirin |
| 1 Tablespoon | fresh cilantro, minced |
| 1/2 Tablespoon | sesame seeds |
| 1 | seedless cucumber, cut in half lengthwise and sliced thinly on a bias |
| 1/4 Cup | shredded carrots |
| 1/8 Cup | Mezzetta sliced hot jalapeno peppers |
| to taste | Kosher salt and black pepper |
Directions
In a large mixing bowl, whisk lime juice, rice vinegar, sugar, mirin, cilantro, sesame seeds, salt and pepper. Add cucumber, carrots and jalapeño slices and stir to combine.
