Thai Cucumber Salad

Ingredients

2 Tablespoon  lime juice
1/4 Cup  seasoned rice vinegar
1-1/2 Tablespoon  Tbsp. sugar
2 Tablespoon  Kikkoman Aji-Mirin
1 Tablespoon  fresh cilantro, minced
1/2 Tablespoon  sesame seeds
1  seedless cucumber, cut in half lengthwise and sliced thinly on a bias
1/4 Cup  shredded carrots
1/8 Cup  Mezzetta sliced hot jalapeno peppers
to taste  Kosher salt and black pepper

Directions

In a large mixing bowl, whisk lime juice, rice vinegar, sugar, mirin, cilantro, sesame seeds, salt and pepper. Add cucumber, carrots and jalapeño slices and stir to combine. Refrigerate in an airtight container for 2-3 hours prior to serving. Serving Suggestion: Makes a flavorful condiment or side salad. You can find it pre-made in our gourmet case.
