All-Purpose Crêpes
Ingredients
| 2 | eggs, beaten | | 1/2 Cup | water |
| 3/4 Cup | 2% milk |
| 1 Cup | all-purpose flou |
| 2 Tablespoon | melted butter |
| - | Canola oil with butter cooking spray |
| - | Filling of your choice |
Directions
Preheat oven to 200°F. Place first 5 ingredients in a blender for 15-20 seconds. Cover and refrigerate for at least 1 hour. Using a nonstick pan, heat a small amount of cooking spray on medium-high heat. Use a ladle to pour 2 ounces of crêpe batter into the pan. Lift pan to gently swirl in a circular motion so that the batter spreads evenly over the center and sides of the pan. Return to heat and cook for 25-30 seconds. Gently flip the crêpe and continue cooking for 15-20 seconds. Place the crêpe on a
parchment-lined baking sheet in oven to keep warm until you are ready to assemble. Recoat the pan with cooking spray between each crêpe.
