Chocolate Zucchini Bread

Ingredients

2 Pound  zucchini, washed
5 Cup  bread flour
2/3 Cup  cocoa powder, such as Hershey¿s® Special Dark
1-1/4 Teaspoon  baking powder
1/2 Teaspoon  baking soda
1 Teaspoon  salt
4-1/2 Cup  sugar
2 Cup  vegetable oil
6  eggs
1 Cup  chocolate chips, preferably bittersweet

Directions

Preheat oven to 350 degrees Fahrenheit. Shred zucchini in a food processor, reserve. Sift flour, cocoa powder, baking powder, baking soda and salt. Set aside. Cream sugar, oil and eggs at medium speed in a standing mixer for 10 minutes. Incorporate the sifted dry ingredients and scrape sides of bowl with a spatula. Add chocolate chips and zucchini. Divide batter evenly among 3 greased-and-floured 9-inch loaf pans. Bake until completely set (around 1 hour, depending on oven). *Thaw overnight in the refrigerator or on the countertop for 2-3 hours.
