Chocolate Zucchini Bread
Ingredients
| 2 Pound | zucchini, washed | | 5 Cup | bread flour |
| 2/3 Cup | cocoa powder, such as Hershey¿s® Special Dark |
| 1-1/4 Teaspoon | baking powder |
| 1/2 Teaspoon | baking soda |
| 1 Teaspoon | salt |
| 4-1/2 Cup | sugar |
| 2 Cup | vegetable oil |
| 6 | eggs |
| 1 Cup | chocolate chips, preferably bittersweet |
Directions
Preheat oven to 350 degrees Fahrenheit. Shred zucchini in a food processor, reserve. Sift flour, cocoa powder, baking powder, baking soda and salt. Set aside. Cream sugar, oil and eggs at medium speed in a standing mixer for 10 minutes. Incorporate the sifted dry ingredients and scrape sides of bowl with a spatula. Add chocolate chips and zucchini. Divide batter evenly among 3 greased-and-floured 9-inch loaf pans. Bake until completely set (around 1 hour, depending on oven).
*Thaw overnight in the refrigerator or on the countertop for 2-3 hours.
